Snicker snicker snickerdoodle blondies!

When you're studying the brain you eventually hit a cracking point where no more information will be absorbed.

That's what baking breaks are for. They are therapeutic and can help rejuvinate the mind...at least that's what I tell myself ;).

After a bit of digging I decided to try Snickerdoodle Blondies. Yes, they are snickerdoodles in a bar form! I made a few slight adjustments, based on recommendations made by other food.com users.

To make these yummy treats, you will need:
  • 2 2/3 cups all purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 nutmeg
  • 1 tsp kosher salt
  • 2 cups brown sugar
  • 1/2 cup butter, softened (cut down from the original 1 cup)
  • 2 eggs
  • 1 Tbsp vanilla extract
Topping:
  • 2 Tbsp granulated sugar
  • 2 tsp cinnamon
Directions:
Preheat oven to 350F. Combine flour, baking powder, cinnamon, nutmeg, and salt. In a separate bowl, beat together butter and brown sugar for 3-5 minutes, until light in colour and a bit fluffy.



Add in eggs and vanilla and beat until smooth.


Stir in flour mixture until well blended.


Spread evenly in a 9x13" greased pan. For the topping, mix the sugar and cinnamon and sprinkle evenly over the batter (not pictured). Bake for 25-30 minutes.




Do you like the pan? It's from Avon! It means nice even squares.

When the squares have cooled, take a bite and enjoy! And think about how much good you're doing for your brain ;).

    #2: Is the electric mixer yours or are all the pics you post of it and its delicious contents taken at your parents' place?
    #3: You could totally add some chopped apple to this recipe to put a dent in those 40lbs!
